Hake Sofrito
- For the hake
In a hot skillet, we pour in sunflower oil. We dust the hake with flour, salt and pepper. We brown the fish for 1.5 minute on each side and we then drain it on absorbent paper towels. - For the sofrito
In a clean skillet, we heat olive oil, brown the finely chopped garlic and finish with the vinegar. Once it evaporates, we pour the wine in. We add the water and boil for 5 minutes. We garnish with the parsley, season to taste and serve the fish topped with the sauce.
Ingredients:
- 1 pack Pescanova hake fillet
- all-purpose flour
- 30ml white balsamic vinegar
- 30ml white wine
- 4 tbsp fresh parsley leaves
- 5 garlic cloves
- olive oil, for the sofrito
- sunflower oil, for browning
- salt
- pepper
- water
