Squid Fillet With Baby Zucchini, Spearmint And Lime
- We cut the zucchinis in slices, boil them for 1.5 minute and put them in a bowl with ice to cool off. We cut the squid in half, score in small squares, coat in flour, season and fry in sunflower oil until golden brown. We drain on absorbent paper towels. In a hot skillet, we pour olive oil and sauté the boiled zucchini; we add the spearmint, spring onion, seasoning, zest, cherry tomatoes and squid and, to finish, we pour over the lime juice.
Ingredients:
- 1 pack of squid cleaned PESCANOVA
- 5 baby zucchinis
- 1 tbsp spearmint, finely chopped
- 1 spring onion, finely chopped
- zest and juice of 1 lime
- 8 cherry tomatoes, cut in 4 quarters
- olive oil
- all-purpose flour
- sunflower oil, for frying
- salt
- pepper
