Squid Fillet With Pico De Gallo

  1. For the pico de gallo
    We marinate all the ingredients (apart from the squid) in a mixing bowl for 40 minutes.
  2. For the squid
    We sprinkle the squid with salt, pepper and olive oil and cook in a pan over high heat for 40 seconds on each side. We take it off the heat and serve on the pico de gallo.

Ingredients:

  • 2 fresh tomatoes, diced
  • 1 package of cleaned squid PESCANOVA
  • 1 onion, coarsely diced
  • 1 chili pepper, cut in thin slices
  • 1 garlic clove
  • juice and zest of 2 limes
  • 20g fresh coriander, finely chopped
  • salt
  • pepper
  • olive oil
