A La Romana With Boiled Veggies, Spearmint And Orange

  1. For a la Romana
    In a preheated oven, we line a baking tray with parchment paper, put the a la Romana and bake at 200 °C for 25 minutes, until golden brown.
  2. For the veggies
    We boil each vegetable separately in a pan with salted water. We cool them off in iced water and drain well. In a bowl, we marinate the veggies in the olive oil, orange, spearmint and we season to taste.

  • 3 medium carrots
  • 1 tbsp fresh spearmint
  • 1 small broccoli, cut in florets
  • olive oil
  • zest and juice of 1 orange
