Crab Salad With Quinoa Tabouleh With Citrus Fruit And Cherry Tomatoes
- We cut the surimi in chunks. We boil the quinoa for 8 minutes; we cool it off under cold running water and strain it well. In a mixing bowl, we combine the crab-flavoured surimi, the boiled quinoa, all the zests and juices, the spearmint, cherry tomatoes, olive oil, spring onion, pepper, cucumber, chive and seasoning.
- We leave them to marinate for 20 minutes.
- We serve.
Ingredients:
- 1 pack Pescanova surimi sticks with crab flavour
- 200g quinoa
- 3 tbsp chive
- 2 tbsp fresh spearmint, finely chopped
- 2 spring onions, finely chopped
- 1 cucumber, diced
- 1 yellow pepper, diced
- 8 cherry tomatoes, cut in halves
- zest and juice of 1 orange
- juice and zest of 1 lemon
- zest and juice of 1 lime
- 200ml olive oil
- salt
- pepper
